Goji Berry Truffles
Our good friend Kristen is a holistic health coach from an Italian family that now lives in Nashville with her hubby, son, and 3 dogs. She also makes some of our favorite recipes. Truffles are one of our favorite desserts to make because they are super easy if you have a food processor or blender and take probably 5 minutes or so to make. Also side note: we used to think dates were gross.. granted we had never eaten any it was more the way they looked ( are we the only ones who think they looks like cockroaches? ) anafter much persistence from a friend we gave them a go and nothing has ever been the same. People say they taste like nature’s candy and that is no lie! Once you whip them up in a food processor they literally taste, bake, and look like caramel!
Here's all the yummy info from Kristen's recipe:
5 simple ingredients ( all organic* )
-CACAO POWDER ( must be unsweetened cacao, not cocoa )
-MAPLE SYRUP ( 100% pure amber, say no to Aunt Jemima )
Directions:
I didn't measure, I just eye-balled it, which makes it more fun... I added each of these ingredients in a food processor, light on the cacao and maple syrup, probably around 6 dates and this made about 8 truffles.
Once mixed and gooey I rolled them into balls using my hands and then rolled them into some cacao powder, then refrigerated for an hour or so. PERFECTION!!!!
